Pinterest Recipe Reviews

As a busy mom and someone who has to stick to a budget, I have to meal plan. I usually try a new recipe every week, because lets be honest... I need a little variety. I recently asked some friends via social media what some of their family's favorite recipes included. I really appreciate all of my wonderful friends for their ideas!! I love trying new recipes that people I know have tried. I use Pinterest most of the time, but sometimes it just doesn't turn out. More than anything I hate wasting food! 

I want to share some of the Pinterest recipes that I have tried recently that were oh so yummy and a few that did not go over well with my family.


Oh so Yummy recipe #1- Squash Chips
We love squash in our house and this was an easy and quick recipe to put on the table. This recipe is even better when the squash comes straight from the garden!

Won't Make Again #1-  Fajita Chicken Casserole
My family is not wild about casseroles and this recipe will definitely not be repeated in our house. The picture looks so good and I love all the veggies in it, but it turned out pretty dry.

OH so Yummy recipe #2- Breakfast Casserole
I seriously make this dinner at least once a week! Sometimes we have it for dinner, sometimes we have it for breakfast and this recipe is definitely an excellent recipe to take to anyone!

Won't Make Again #2- Philly Cheese steak Sandwiches
Sometimes on Fridays, ok not just on Fridays, but I crave something completely unhealthy and greasy. This is definitely all of those things, but really have zero flavor.


Oh so Yummy recipe #3- Honey Garlic Chicken
Everyone in my family loves this delicious chicken! This is pretty much beef stew, just replace the beef with chicken. Lots of yummy veggies and the best part it is cooks in just one pot!

Won't Make Again #3- Corn Chowder
This recipe was a total disappointment! The end result looked nothing like the picture and I ended up having to chunk it.

Summer Recipes

It has been a while since I shared some new recipes with you. To be honest, I have not been experimenting with too many new recipes because it has been so pretty we have been doing a lot of grilling! Which is so easy for me and healthy. 

Last week Michael and Grace did have a bit of a cold so I decided to nurse them back to health with some chicken and rice soup. This recipe was the easiest and tastiest soup recipe I have made in quite some time.  It also made a lot so I went ahead and put some in the freezer for the next time noses begin to run in my house.

We love asparagus in this house. So when I ran across this recipe I knew I had to give it a shot, of course it helped when I saw a lot of bacon too! 5 ingredients definitely helps my budget and my lack of time lately.

Here is the prefect summer dessert. Grace loved all the strawberries and blueberries! Even though there is a lot of sugar, it made me feel better with all the yummy berries. I know some of you have already gone berry picking this summer and this would be the prefect recipe to use up some of your berries. It also have a cute name "Berried Treasure".

Currently Loving

Now I am going to warn you ahead of time that this is a very random list. These are all things that this week I am loving and wanting.


1. I found this recipe off of pinterest and LOVE it! Michael and I ate almost the entire pot full in one night. I made some rice and we used it was a dip and put it in a wrap with avocado and a little more cheese. Delicious!

2. Grace had grown out of all her tennis shoes and she was in desperate need of more! I headed to a few stores, but ended up getting these shoes from Khols. She loves her little running shoes. She feels like such a big girl.


3. We are borrowing this from some friends and Grace thinks it is a hit! It plays 6 different songs and has numerous things to turn, pull and push on this cube! Hours of laughter filled here!

4. This is not a new love, but maybe you could say a rekindled one. I use these wipes on everything! Especially since we have had some runny noses lately. I wipe just about everything down with them.

5. My new fence! I can't wait to share pictures with you!

Zucchini Bread

Ok as promised... here is the absolute best and easiest zucchini bread recipe! About 5 years ago when we had our first garden I tested out numerous zucchini bread recipes and this one won! It is easy, you will have everything you need already in your pantry, and it is super delicious! 

Zucchini Bread

3 cups flour
1 cup oil
2 cups washed, pealed and shredded zucchini
1 tsp baking soda
1 tsp backing powder
1 tsp salt
3 tsps cinnamon
3 tsps vanilla
3 eggs
2 cups sugar

1. Preheat oven to 325.
2. Grease 2 bread pans.
3. Mix all wet ingredients and sugar.
4. Mix all dry ingredients and then add to wet ingredients.
5. Add zucchini and mix.
6. Bake 40-60 minutes or until done.

Can you tell what she is going after?!?!

This bread is really good after it has been frozen too! Great to bring to a last minute gathering or to sneak some veggies into your children's diet!

 This was a pretty easy and relaxing week. I hope you enjoy!

Day 1:
Spaghetti & Garlic Bread
Now you might be wondering why every week we have Spaghetti? Well it is my husband's favorite food. So being the nice wife I am every Wednesday night is spaghetti night at our house. It gives him a little pick me up in the middle of a week. 

Day 2:
Chicken Chili & Corn Bread
              2-3 chicken breasts in crockpot with water and salt and pepper and allow to cook for 6 hrs or so.
                 Then add:
                 Corn
                 diced can tomatoes
                 kidney beans
                chili seasonings.

                Shred chicken in crock pot. Add all ingredients to pot and cook till done.

Chicken Chili is one of those go to dishes of mine. It is so easy to make, it goes all in one pot, and I always have these ingredients in my pantry. It is also nice because when I make it my husband is happy! It is so good on a cold rainy day. Enjoy.



Day 3:

Bacon Quiche

1  recipe
Pastry for Single-Crust Pie



1/2  chopped onion 
6  slices
bacon, chopped
 (I used leftover from breakfast)
4  
beaten eggs

1/2  cup
dairy sour cream

1/2  cup
half-and-half
1/4  teaspoon
 salt



1/8  teaspoon
 pepper



2  cups 
lightly packed chopped fresh spinach



2 handfuls of shredded cheese (I used swiss and cheddar)


            Prepare and roll out Pastry for Single-Crust Pie. Line a 9-inch pie plate with the pastry. Trim; crimp edges as desired. Line the unpricked pastry shell with a double thickness of foil. Bake in a 450 degree F oven for 8 minutes. Remove foil. Bake for 4 to 5 minutes more or until pastry is set and dry. Reduce oven temperature to 325 degrees F. Meanwhile, in a large skillet cook onion and bacon until onion is tender and bacon is crisp. Drain on paper towels. In a bowl stir together eggs, sour cream, half-and-half, salt, and pepper. Stir in onion mixture, spinach, and cheeses. Pour egg mixture into the hot, baked pastry shell. Bake in the 325 degree F oven for 45 to 50 minutes or until a knife inserted near the center comes out clean. If necessary, cover edge of crust with foil to prevent overbrowning. Let stand for 10 minutes before serving. Makes 6 to 8 servings


I am new to making quiches. My mom always used to make quiche for us growing up and my husband loves them. This one has worked well for me, but I am also looking for more quiche recipes. 

Day 4:
Broccoli cheese Soup & Crackers
           

             1 tablespoon melted butter
             1/2 medium chopped onions
             1/4 cup melted butter
             1/4 cup flour
             2 cups half-and-half crea
             2 cups chicken stock
             1/2 lb fresh broccoli
             1 cup carrots, chopped
             8 ounces grated sharp cheddar cheese
             salt and pepper
      
             Sauté onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half & half. Add the chicken stock. Simmer for 20 minutes. Add the broccoli, carrots and onions. Cook over low heat 20-25 minutes. Add salt and pepper. Can be puréed in a blender but I don't. Return to heat and add cheese. The longer it sits the softer the veggies get and the better it tastes!

Day 5:
Tacos

Chicken Sandwiches
I try to make this as easy as possible, so I put a couple chicken breasts in the crockpot and let them cook until easy to shred. Then I butter some bread, insert shredded cheese the shredded chicken, lettuce, tomato and mayo. Heat up on a frying pan. Makes for a quick and easy dinner!

I love sandwiches! I could eat sandwiches for breakfast, lunch and dinner. I don't know if my husband would like it very much, but I have to add something I like.
