Menu 3


This week is made up of a lot of nice winter foods! I love foods that just make you feel nice and warm on the inside. I also tried to keep the cost down even more than normal this week. I hope this will help you with your weekly menu!

Day 1:
Vegetable soup
 Ingredients:
1 pound ground beef
1/2 onion chopped
1 tablespoon flour
1 can Rotel tomatoes and green chilies
1 small can tomato sauce
1 can beef broth
2 cups of water
2 cans whole new potatoes (drained and cut into bite size pieces)
1 bag mixed vegetables
1/2-1 teaspoon Italian seasoning
1 teaspoon chili powder
1/4 -1/2 teaspoon red pepper flakes (optional)
1/4 teaspoon celery seed
1/2 teaspoon garlic powder
salt and pepper to taste
1 cup elbow macaroni
Instructions:
Brown ground beef and chopped onion, drain off grease. In a large soup pot to beef and onions add flour and stir well until well incorporated. Add other ingredients except for the macaroni and cook on medium heat for 20-25 minutes. Add 1 cup elbow macaroni and cook for 10 minutes.
Day 2:
Beer Chicken, baked potatoes & green beans
Ingredients
2lbs skinless, boneless chicken breasts (I used 8 breasts, 4oz ea)
1 bottle or can of your favorite beer 
1 tsp salt
1 tsp garlic powder
1 tbsp dried oregano
1/2 tsp black pepper
Instructions
Place all ingredients in the crock pot, and cook on high for 4-5 hrs, or low for 6-8 hrs.
(I also put some cheese and some left over bacon from breakfast on top of the chicken and popped into the oven right before serving to add a little extra!)

Day 3:
Chicken chili & corn bread
Ingredients
 2-3 chicken breasts in crockpot with water and salt and pepper and allow to cook for 6 hrs or so.
Then add:
Corn
diced can tomatoes
kidney beans
chili seasonings.
Directions:
Shred chicken in crock pot. Add all ingredients to pot and cook till done.

Day 4:
Spaghetti & garlic bread


Day 5:
Boston Butt, bread, peas and carrots, mac and cheese
 1 Boston Butt (needs to have at least one side of fat)
1 liter coke
Salt to taste
BBQ sauce (your favorite kind)
 Directions:
Put the meat in the crock pot with the fat side up. Pour the coke in until it just covers the meat. Salt the meat a little. Set the crock pot on low for 6-8 hours. Once the meat is cooked pull the meat out and shred and make sure to throw out all the fat. Pour the BBQ sauce on to taste and salt more. 

Day 6:
Frozen soup
I have left over soup that I had frozen from the other week. I am breaking it out and taking a night off!

1 bag mixed vegetables
1 bottle beer
Garlic bread
Cheese
Milk
Butter
Egg
