First Month Must Haves

I have been a mom for a month now and have learned a few things along the way. Here are a few items that I have found come in really handy with a newborn. 

1. Graco Pack N Play- This is the pack n play that we bought from target. We put it in our bedroom so I do not have far to walk in the middle of the night. This pack n play has wheels too so I can move it into whichever room I am in. It is also gender neutral so we will be able to use it in the future. (hopefully)
2. Playtex Diaper Genie- We have this right next to the changing table. I hate trash and this is easy to keep it away and looks good too!

 3. Soothie Pacifier- So far Grace will not take any other pacifier except these.
 4. Desitin- We had a really bad diaper rash week 2 and we tried a lot of different ointments and this was the only one that made a difference.

5. Infant bath tub- A wonderful friend gave us this bath tub and it has been a lifesaver! I can wash her all by myself and in the kitchen. 


6. Changing Pads-  I like to change Grace's diapers at the changing table and she likes to pee as soon as I take off her diaper. In the middle of the night it is easy just to roll this up instead of changing  the cover every time. 

I hope this helps some new moms. This is just a few things I have found to make life a little easier. 

Cheeseburger Soup


As I mentioned before, I made up a lot of meals that I could freeze before Grace was born.  This soup is amazing! It was very easy to make and really tasty! This I will definitely make again. I don't know how healthy the soup is, but I love it. 

Cheeseburger Soup 
1/2 pound ground beef
3/4 c chopped onion
3/4 c shredded carrots
3/4 c diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
5 Tablespoons butter, divided
2 cans chicken broth
4 cups peeled, diced potatoes (I used unpeeled red potatoes)
1/4 cup flour
2 cups (8oz) Velveeta, cubed
1 1/2 cup milk
3/4 teaspoon salt and 1/2 teaspoon pepper
1/4 cup sour cream
In a 6-quart saucepan, brown beef; drain and set aside beef. In the same saucepan, sate onion, carrots, celery, basil and parsley in 2 Tablespoons butter until vegetables are tender (about 10 minutes). Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small pan, melt remaining 3 Tablespoons of butter. Add flour; cook and stir for 3 minutes or until bubbly. Whisk into soup; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add Velveeta, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat; stir in sour cream. Makes 8 servings.

Chocolate Eclair Dessert


Before Grace was born I tested out quite a few recipes that I found via Pinterest. (which is where I find a lot of my knowledge) This is a recipe that I took from another mom. Michael and I loved this dessert very much. Happens that I made this the night before Grace was born and all of our family enjoyed it. I can't wait to make it again and enjoy it myself. If you are looking for a easy recipe this is it, just do a little planning ahead because it has to sit in the fridge over night. Enjoy!


Chocolate Eclair Dessert

Filling:
2 (3.5 oz.) boxes vanilla instant pudding
3 c. milk
1 (12 oz.) container Cool Whip
Graham crackers

Topping:
1/3 c. cocoa
1 c. sugar
1/4 c. milk
1 stick butter (or margarine)
1 tsp. vanilla

For the filling: Mix pudding and milk; beat. Stir in Cool Whip. Place a layer of graham crackers in the bottom of a 9x13" dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers.

For the topping: Bring cocoa, milk, and sugar to a boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted. Pour over the top layer of graham crackers. Refrigerate over night.

Just writing this recipe makes me want to eat some!
