 This was a pretty easy and relaxing week. I hope you enjoy!

Day 1:
Spaghetti & Garlic Bread
Now you might be wondering why every week we have Spaghetti? Well it is my husband's favorite food. So being the nice wife I am every Wednesday night is spaghetti night at our house. It gives him a little pick me up in the middle of a week. 

Day 2:
Chicken Chili & Corn Bread
              2-3 chicken breasts in crockpot with water and salt and pepper and allow to cook for 6 hrs or so.
                 Then add:
                 Corn
                 diced can tomatoes
                 kidney beans
                chili seasonings.

                Shred chicken in crock pot. Add all ingredients to pot and cook till done.

Chicken Chili is one of those go to dishes of mine. It is so easy to make, it goes all in one pot, and I always have these ingredients in my pantry. It is also nice because when I make it my husband is happy! It is so good on a cold rainy day. Enjoy.



Day 3:

Bacon Quiche

1  recipe
Pastry for Single-Crust Pie



1/2  chopped onion 
6  slices
bacon, chopped
 (I used leftover from breakfast)
4  
beaten eggs

1/2  cup
dairy sour cream

1/2  cup
half-and-half
1/4  teaspoon
 salt



1/8  teaspoon
 pepper



2  cups 
lightly packed chopped fresh spinach



2 handfuls of shredded cheese (I used swiss and cheddar)


            Prepare and roll out Pastry for Single-Crust Pie. Line a 9-inch pie plate with the pastry. Trim; crimp edges as desired. Line the unpricked pastry shell with a double thickness of foil. Bake in a 450 degree F oven for 8 minutes. Remove foil. Bake for 4 to 5 minutes more or until pastry is set and dry. Reduce oven temperature to 325 degrees F. Meanwhile, in a large skillet cook onion and bacon until onion is tender and bacon is crisp. Drain on paper towels. In a bowl stir together eggs, sour cream, half-and-half, salt, and pepper. Stir in onion mixture, spinach, and cheeses. Pour egg mixture into the hot, baked pastry shell. Bake in the 325 degree F oven for 45 to 50 minutes or until a knife inserted near the center comes out clean. If necessary, cover edge of crust with foil to prevent overbrowning. Let stand for 10 minutes before serving. Makes 6 to 8 servings


I am new to making quiches. My mom always used to make quiche for us growing up and my husband loves them. This one has worked well for me, but I am also looking for more quiche recipes. 

Day 4:
Broccoli cheese Soup & Crackers
           

             1 tablespoon melted butter
             1/2 medium chopped onions
             1/4 cup melted butter
             1/4 cup flour
             2 cups half-and-half crea
             2 cups chicken stock
             1/2 lb fresh broccoli
             1 cup carrots, chopped
             8 ounces grated sharp cheddar cheese
             salt and pepper
      
             Sauté onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half & half. Add the chicken stock. Simmer for 20 minutes. Add the broccoli, carrots and onions. Cook over low heat 20-25 minutes. Add salt and pepper. Can be puréed in a blender but I don't. Return to heat and add cheese. The longer it sits the softer the veggies get and the better it tastes!

Tacos

Day 6:
Chicken Sandwiches
I try to make this as easy as possible, so I put a couple chicken breasts in the crockpot and let them cook until easy to shred. Then I butter some bread, insert shredded cheese the shredded chicken, lettuce, tomato and mayo. Heat up on a frying pan. Makes for a quick and easy dinner!

I love sandwiches! I could eat sandwiches for breakfast, lunch and dinner. I don't know if my husband would like it very much, but I have to add something I like.
