Menu 2


It is another week and time again for me to head to the grocery store. (Secretly I love the grocery store. I love to shop and BUY, which I do not do often) This week's menu has a good mix of chicken, beef and pork. In the "list" I list everything you will need for the week, but I am sure you can find some of these things in your pantry or freezer. 

Day 1:
Spaghetti and garlic bread
Day 2:
Chicken Enchiladas and chips
Day 3:
Salisbury Steak, green beans and baked potatoes 
Day 4:
Roast and Bread
Day 5: 
Chicken and Broccoli
Day 6:
Pork Tenderloin and Broccoli & Cheese Casserole

2 1/2 lb chicken breasts
1 1/2 lbs ground beef

pork tenderloin (I buy the kind already seasoned)

Breadcrumbs
Ketchup
Dry mustard
Worcestershire sauce
Beef bullion cubes
Butter
Olive oil
Cornstarch
Pantry-
Spaghetti noodles
Spaghetti sauce
1 dozen tortillas
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 can green chili
Chicken broth
1 can chili beans
Tortilla chips
Beef broth
2 cans Green beans
1 can cream of cheddar soup
Rice
Cheese whiz
Fridge/Frozen-
Garlic bread
Mexican cheese
Bread to eat with roast
Sour cream
Cheddar cheese
2 bags Frozen broccoli



Salisbury Steak:
Meat Mixture:
1 1/2 pounds lean ground beef
1/2 cup seasoned breadcrumbs
1 tablespoon ketchup
2 teaspoons dry mustard
4 dashes Worcestershire sauce
1 cube beef bouillon, crumbled
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
Gravy:
1 whole onion, halved and thinly sliced (or diced if you prefer)
2 cups beef broth, more if needed for thinning
1 tablespoon ketchup
4 dashes Worcestershire
1 teaspoon cornstarch
Salt and pepper
Directions:
For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

Creamy Crock-pot Chicken and Broccoli Over Rice
3-4 boneless chicken breasts
1 10oz can cream of chicken soup
1 10 oz can cheddar soup
1 14 oz can chicken broth
½ teaspoon salt
¼ teaspoon garlic salt seasoning
1 cup sour cream
6 cups broccoli florets, just fork tender (I cooked it in boiling water for 3-4 minutes)
1 cup shredded cheddar cheese
Directions:
Place soups, chicken broth, salt, and garlic seasoning into a crock-pot over low heat. Whisk until smooth. Place chicken in, pressing to the bottom. Cover lid and cook on low for 6 hours or on high for 3 hours. When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli. Serve over steamed rice and sprinkle with cheese.  4-6 servings


Broccoli Casserole
2 cups cooked rice
1 pk of broccoli thawed
1 can cream of mushroom soup
1 8 oz can of cheese whiz
1/2 cup chopped celery
1/2 cup chopped onion
Directions:
Mix all ingredients together and put in a baking pan. Bake 350 for 30-45 minutes



Chicken Enchiladas
2 cans chicken
Tortillas
1 can cream of mushroom
1 can cream of chicken
1 can green chili
1 chopped onion sautéed in butter
1/2 cup chicken broth
1 can chili beans
1 cup Mexican cheese
Directions:
Mix all ingredients together except tortillas. Then put mixture into tortillas. Reserve some mixture to put on top of tortillas while baking. Add more cheese to top and bake at 350 for about 20 minutes or until bubbly.
This is one of my Momma's originals, that I grew up eating and will always love!

Roast
Oven Roast (whatever size you desire for your family)
carrots
onion
green beans (or if you have any leftover veggies from the week)
potatoes
salt 
pepper
water
oil
seasonings (I like to use italian dressing)
Directions:
Throw all your ingredients in the crock pot and cook for 6-8 hrs.



Pork Tenderloin - I buy the kind already seasoned and wrap in foil and add olive oil. Place in a baking dish and cook till done.

  1. All these look so good. I made roast and Gravy yesterday. It was delicious. Mo made the twice baked potatoes, green beans, and Karen made the brownie and ice cream. Yum Yum
